Sunbutter

I am not deluded, you come to this blog for recipes and lately I have not been delivering.  I still hold on to the delusion that you like the other “lifestyle” and yoga stuff that I post.  I am finally posting a recipe.  I haven’t been making lots of new things in the kitchen because

  1.  I haven’t really been in the mood
  2. I have been really busy
  3. Finances have been tight

sun ButterFor the above mentioned reasons, it’s been a parade of rice and beans, root vegetables and beans and whatever else my mom cooked.  After a serious flare up (fibro, endo, eczema) last week I made some sun butter.

For those of you who do not know sun butter is a peanut putter alternative made with sun flower seeds.  I love peanut butter but it triggers my eczema.  Sometimes almond butter burns my stomach and its quite expensive here.  This sun butter was really easy to make and tasted surprisingly good without any sweeteners.

Ingredients

2/3 cup sunflower seeds
2 tbsp coconut oil
1/4 tsp cinnamon
(optional)

Directions

  1. Place sunflower seeds in blender or food processor and blend till it becomes a fine powder.
  2. Add oil on tbsp at a time and blend until a creamy paste is formed.
  3. Enjoy!
