Quick Bread and other musings

A few years ago I got the bright idea to document my hopes and dreams for all the word to see.  I had a blog on blogger that I have since made private.  I imported three of the posts to share with you.  Below you will find an easy bread recipe.  I made this all the time before I stopped using yeast.  Apparently, in those days I didn’t give instructions.  This recipe needs water.  So here is the addendum
  • mix all the dry ingredients
  • add the wet ingredients and enough water to make a batter resembling pancake batter
  • place in a greased bread pan and bake at 350 degrees until a skewer comes out clean.

I have to mention that I haven’t made this in years.

There’s nothing like fresh baked bread. It’s so filling and makes for a happy tummy.

4 cups Bob’s all purpose flour
1/2 tsp potato flour
4tsp xanthan gum
2 tbsp yeast
2 tsp salt
1tbsp sugar
1/4 C flax seed meal (optional)
1/2 C olive oil
2  tbsp apple cider vinegar
