I love cheese. Given the choice between cheese and chocolate I would choose cheese. It was really hard to give up cheese in 2009 but I couldn’t deny the effects of dairy on my body. I haven’t really tried to find any substitute for cheese because I’m not a fan of the over processed vegan cheeses and I don’t tolerate nutritional yeast.
I have been curious about nut cheese for a while but the recipes I saw all look like too much work. Finally I decided that I needed a cheese like spread to go over my flat bread. I already knew I wanted to use cashews, lemon and cayenne pepper. I decided to look more diligently because I didn’t want to reinvent the wheel. I used the following recipes for inspiration:


After a few tries here’s the recipe I came up with:

Ingredients
1 C raw cashew soaked for 4 hours
1/8 tsp cayenne pepper
1/2 tsp sea salt
2 tbsp lemon juice
3 tbsp water
Directions
Place ingredients in a high powered blender and pulse until creamy, stopping occasionally to scrape the sides. If you would like a thinner cheese add more water. You can soak the cashews for longer but I find it starts to get slimy after 6 hours.
I enjoyed my cream cheese with cinnamon raisin flat bread and spent a few moments in heaven. This is now one of my favorite recipes. I hope do make a herbed version very soon.
