The pumpkin recipes just keep coming. When you puree and entire pumpkin you have to find something to do with it. I tried to make pumpkin pancakes but it just didn’t happen. They came out ooey and gooey. I would have liked them to be light and fluffy. My mom and I fought over them. I was planning to tinker with the recipe to get it nice and fluffy before I shared it. I changed my mind. I decided to let you tinker with it. Report back, or not. Or maybe let it inspire you to create something great.
Ingredients
1/2 cup oatmeal
1 ripe banana
1/2 cup pumpkin puree
1 cup all purpose self raising flour
1/4 cup stevia
Directions
- Mix all dry ingredients
- Add wet ingredients
- Mix well with electric mixer or by hand
- Place 1/4 cup of mixture on heated skillet
- Flip when edges begin to lift
- Remove from heat when both sides are golden brown
- Enjoy
