After the success of my carrot cake energy bars, including being featured on Minimal Ingredient Monday over at Sift Stir and Savor, I decided to try my hand at another flavor for my energy bars.
There were some changes I wanted to make. I resisted adding coconut the last time in deference to those people who might be sensitive to coconut. I also wanted it to be less mushy and more filling. So I added toasted oats and coconut. This bar is coconut chocolate goodness and the perfect thing to give me a little boost of energy during the day.
Makes 26 Bars
Ingredients
1 1/2 cup raw cashews
1 cup prunes
1 1/2 cup raisins
1 cup coconut flakes
1/2 cup toasted gluten free rolled oats
1/4 toasted coconut flakes
4 tbsp unsweetened cocoa powder
Directions
- Place nuts in food processor, process and set aside.
- Place prunes and raisins in food processor, process until a paste is formed.
- Add coconut flakes and cocoa powder
- Process until well mixed and a doughy ball is formed.
- Place the dough in a large bowl and fold in toasted oats and toasted coconut.
- Line a tray with parchment or wax paper.
- Place mixture in the parchment lined tray and use a spoon to spread it into one smooth layer.

- Place in the refrigerator to set for at least one hour.
- Remove from fridge, use a sharp knife to cut into bars.
- Individually wrap the bars in foil or wax paper.
- Place in the fridge or freezer.
- Unwrap and enjoy!
I did a nutritional comparison with the carrot cake bars and this one is just what i needed. More fiber, more fat, more carbs and more filling.
